What happens when you combined a chocolate chip cookie with a chocolate brownie? A Brookie! The name may sound funny but they taste great! These brookies are crisp on the edges and chewy in the middle.
The nice thing about this bake is that every brookie you will make is different because when you combined the 2 doughs together they will mix together differently when rolled into a ball and baked. I made a batch of these brookies when I was at uni and they were all gone within a few hours. In the future I am going to experiment with different flavours and see what works well together.
Ingredients:
Chocolate Chip Cookie:
145g Soften Butter
135g Granulated Sugar
135g Soft Brown Sugar
270g Plain Flour
175g Chocolate Chips
1 x Egg
1 x Egg Yolk
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Vanilla Extract
Brownie:
145g Soften Butter
135g Granulated Sugar
135g Soft Brown Sugar
175g Plain Flour
60g Cocoa Powder
1 x Egg
1 x Egg Yolk
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Vanilla Extract
1. Start by making the cookie dough, in a large mixing bowl add the soft brown sugar, granulated sugar and soften butter. Mix using a stand mixer until the mixture becomes paler.
2. While the mixture is mixing add the egg and the egg yolk. Once full incorporated add the vanilla extract.
3. Add the flour, chocolate chips, baking powder, baking soda and mix for 2 minutes. Once the dough is formed, leave to chill in the fridge.
4. To make the brownie mixture, in a large mixing bowl add the soft brown sugar, caster sugar and soften butter. Mix using a stand mixer until the mixture becomes paler.
5. While the mixture is mixing add the egg and the egg yolk. Once full incorporated add the vanilla extract.
6. Add the flour, cocoa powder, baking powder, baking soda and mix for 2 minutes. Once the dough is formed, leave to chill in the fridge.
7. While the cookie and the brownie dough are chilling pre heat the oven to 180C/Gas Mark 4.
8. Once the doughs have chilled for 20 minutes take the doughs out the fridge. To make the cookies take a tablespoon of each dough. Roll each piece of dough into a round ball. Then push together the cookie and the brownie doughs together to form ball, rolling the dough in the palm of your hand.
9. Place the brookie dough balls on to a tray lined with parchment paper. Lightly press down the dough balls.
10. Place the brookies in the oven for 10 minutes. The edges should be nice and crisp.
11. Leave the brookies to cool for 5 minutes and then place them on a wire rack to cool.
