Focaccia was the third technical challenge of the second series of The Great British Bake Off. This a great challenge to test the bakerβs bread skills as focaccia contains a lot of water, which is different, compared to most bread recipes. It is important to use all of the water in the recipe no matter how sticky the dough gets, as this is what gives the focaccia its signature irregular crumb structure (see the picture at the bottom of the page).

Blondies are similar to brownies however; it uses vanilla or white chocolate instead of normal milk or dark chocolate. The light brown sugar also gives a subtle caramel flavour to blondies. For the recipe I used my Salted Caramel Brownies are inspiration, I used Nutella instead of salted caramel in this recipe.

Loaf cakes are simple cakes to make that go perfectly with a cup of tea or coffee. Oreos are one of my favourite cookies so I decided to incorporate them into a loaf cake. Since this is a loaf cake it can take up to an hour until the middle of the cake is cooked. This cake will brown very quickly, so once the cake has baked for around 40 minutes cover the top with some tin foil.
