I decided to turn my three layered Terry's Chocolate Orange Cake into 24 little cupcakes. These cupcakes are great for sharing and are quick to make. The cupcakes have a fudgy chocolate orange taste and are filled with Terry's Chocolate Orange ganache and are then decorated with Terry's Chocolate Orange Buttercream and a segment of Terry's Chocolate Orange!
Chocolate Orange Cupcakes:
150g Soften Butter/Baking Spread
400g Caster Sugar
4 x Eggs
75g Cocoa Powder
260g Self-raising Flour
75ml Milk
9 tbsp Orange Juice
1 1/2 tsp Baking Powder
Zest of 1 Orange
Buttercream:
190g Soften Butter
600g Icing Sugar
3 Tbsp of Orange Juice
Filling:
120ml Double Cream
Decoration:
1. First, preheat the oven to 180C/350F/Gas Mark 4. In a large mixing, bowl add the softened butter/baking spread, caster sugar, eggs, cocoa powder, baking powder, self-raising flour, milk, orange zest and orange juice. Mix until of the ingredients have been evenly mixed together.
2. Divide the Chocolate Orange Cupcake batter into cupcake cases using an ice cream scoop. Using an ice cream scoop allows you to get the same amount of cupcake batter in each case quickly.
3. Bake the Chocolate Orange Cupcakes for 13-16 minutes.
4. While the Chocolate Orange Cupcakes are baking, make the Terry’s Chocolate Orange Ganache by heating the double cream in a pan until it starts to simmer.
5. While the double cream is heating up, break the Terry’s Chocolate Orange into small pieces. Then pour the double cream over the Terry’s Chocolate Orange and mix until all of the chocolate has melted. Leave the Terry’s Chocolate Orange Ganache to cool in the fridge for an hour.
6. Once the Chocolate Orange Cupcakes have baked leave them to cool on a wire rack for 30 minutes.
7. Next make the buttercream by adding the softened butter, icing sugar and melted Terry’s Chocolate Orange into a large mixing bowl and mix until all of the ingredients are mixed together. Slowly add the orange juice until you get a spreadable consistency.
8. Once the Chocolate Orange Cupcakes have cooled, use a cupcake corer to remove the middles of the cupcakes.
9. Transfer the Terry’s Chocolate Orange Ganache into a piping bag and add the Terry’s Chocolate Orange Ganache into the middle.
10. Add the cupcake cores back to cover the ganache.
11. Transfer the Terry’s Chocolate Orange Buttercream into a piping bag with a Wilton 2M Piping Tip and pipe rosettes onto the Chocolate Orange Cupcakes.
12. With the remaining Terry’s Chocolate Orange Ganache drizzle the ganache over the cupcakes.
13. Finally to decorate add a segment of Terry’s Chocolate Orange on top of the cupcakes.
